Granola – Gluten Free

Granola – Gluten Free and all cleaned up

Makes 3-4 cups of cereal

Dry ingredients

1 ½ Cup Traditional Oats

1 Cup Raw Buckwheat – pre-soaked in water for 6-8hrs rinsed and well drained

1/2 Cup of each: Puffed Amaranth or Millet / Quinoa flakes / Rice Bran

1/2 cup Raw Almonds – sliced or roughly chopped

1/3 Cup of each: Raw Sunflower Seeds / Pumpkin seeds / Shredded Coconut

1 Tsp Cinnamon

¼ Tsp Nutmeg & All Spice

Pinch of Sea Salt

Coating Mixture

2 tbsp. Raw Honey

½ tbsp. Organic Molassis

¼ Cup Oil – (Coconut, Olive or Avocado)

1 tsp. Vanilla Extract

Additonal add in: 1/2 cup dried fruit i.e. cranberries, sultana, raisens

Pre-heat oven to 140oC.

Line 2 baking trays with baking paper

Mix all the dry ingredients in a large bowl until well combined.

In a small bowl or jug melt the coating ingredients until runny (stand in warm water). Add this to the dry ingredients and work it in until everything is well coated.

Devide the mixture onto the trays and spread out. Bake for approx 30mins but keep watching as it needs to be turned very regularly. Cook until an even light brown colour.

If using dried fruit, allow the Granola to cool slightly and then mix in. Cool completely prior to storing in an airtight container.

Notes: you can use whatever grains you have available and suit your dietary needs.

The coating mixture looks a small volume compared to the dry ingredients….don’t be tempted to increase this as all you want is a thin coating, you want to end up with Granola not a museli slice!

If you gnerally like to add fresh or frozen fruit with your Granola when eating, then omit the dried fruit so that you don’t double up on fructose sugars.
