Chocolate Log

This is utter decadence made from pure goodness! Your very own rich and healthy toblarone bar! Rich chocolate with a hint of coffee and a crunchy nutty texture.

Perfect for so many occasions: pre or post workout, great swop for that afternoon chocolate fix, prefect to take along to a party as an after dinner treat or cheeseboard accompaniment.

Why not wrap it up in beautiful coloured silicone paper and give as gift!

Makes 2 logs approx. 9”

Ingredients:
1/4 cup of each: dried dates and prunes (stoned)
½ cup mixed nuts: almonds, brazil and walnuts work well
Shot of espresso
3 tbsp. raw cacao powder
1 scp protein powder (vanilla or chocolate^)
1 tbsp. flax seeds
2 tbsp. chia seeds
1 – 2 tbsp dried unsweetened cranberries

Method
Soak the dried fruit in the espresso for 30 – 60 mins; the longer the better!
Drain and retain the remaining liquid.

In a food processor add: soaked fruit, nuts, flax seeds, cacao and protein powder. Process until a soft mass forms, add a little of the espresso liquid at a time if needed. Careful not to over process.
Turn into a large bowl then mix in the chia seeds and cranberries. Chop the cranberries if they are large. Spoon the mixture onto a sheet of baking paper and mould in to a triangle log shape. Be sure to really press the mixture together to ensure you don’t have big pockets of air.

Place in the freezer or an hour prior to slicing. Keep chilled.

Note: if you don’t have any protein powder then double the flax and chia seeds. I use pure pea protein as my choice and to not only increase the protein levels within the log but this also aids in slowing down the absorption of the sugars from the fruit into the blood stream.
