Fresh and tasty and goes with a variety of meats, fish or tofu.
1 cup of Chickpeas (cooked and well drained) or use tinned of ease
1 large tomato – deseeded and chopped
1/4 red onion – finely chopped
1/4 long cucumber – chopped
3/4 cup mixed fresh herbs – parsley and coriander – chopped
zest and juice of fresh lemon
2 tbsp extra virgin olive oil
salt and cracked pepper to taste
Mix everything together and chill prior to using. Tastes great the next day.
I actually served this with the Moroccan Lamb (recipe posted a little while ago) and Coriander Yogurt on the side: 1 cup plain natural yoghurt, 1/3 cup fresh coriander finely chopped and pinch of paprika (optional) give it a good stir and chill prior to serving. Enjoy 🙂
