Thinking ahead can save you heaps of time but also provide another meal / snack ready to go… These are great straight from the oven or cold.

They are so easy to make: I line a muffin tin with cut squares of baking paper because it saves me having to scrub the tin!

Pre-heat the oven to 180oC.

Tear a rasher of quality bacon in half and press into the mould. Bake for 5 mins, then take out of the oven and drop an egg into each mould.  Baked for a further 15-20mins until the whites are set.  Done!

Breakfast, lunch, dinner or snack…they keep for a couple of days in the fridge in a sealed container. Make sure you cool prior to refrigerating.
