Fresh, filling, quick to build and transportable! Makes for an easy lunch option. No bread in sight which is great if your wheat or gluten free and an easy way to add in extra veggies without feeling like your wading through a whole pile of veg, which of course you are!
These are also much quicker, less messy and more cost effect than trying to make rice paper rolls.

Filling is your choice but make sure you have some healthy fats in the mix!
My choice of filling in todays rolls: Avocado, roast chicken, raw mushroom, grated carrot, cucumber and cracked black pepper.
Make in advance for lunch. Wrap in parchment paper or cling wrap, chill and eat when required.
