Quick to create and no cooking! I used a combo of raw veggies as the carrier packed with flavoursome protein, nice and light for lunch/dinner but extremely filling too!
Another great lunchbox option.
Choose your own filling but here’s what went into mine today.
1 x 200gm tin of Salmon (wild caught and dolphin friendly)
3 sundried tomatoes (chopped)
1/2 spring onion (chopped)
Fresh herbs from garden (basil today)
Chilli flakes (optional – I like a little kick!)
Squeeze lemon juice
Salt & Pepper to taste
Mix all together and stuff into raw veggies – my choice today was yellow capsicum, a large raw brown mushroom and a half a large tomato, deseeded.
You can use whatever you have in the fridge/cupboard: tuna is great, sardines, chicken, lentils, chickpea…. Just use this as a great way to get some good protein and lots more vitamins, minerals and fibre from the raw veg.
Lunchbox: Make a batch of filling that you can use over a couple of days; fill veggies of choice and store in sealed container/ cling wrap or foil cover. Refrigerate until needed.
P.S. I actually only eat the yellow capsicum for lunch but I’ve had the other 2 for dinner – so easy 🙂
