OK, I know what your thinking….hang on, she posted that pancake yesterday! Well, this one is different, not only is it Gluten free and Vegan but also suitable for Coeliac’s that maybe completely intolerant to Oats.
After this mornings workout, I so fancied a pancake (yesterday’s tasted so good – yes I managed to sneak a little!). I had no eggs but did have tofu in the fridge so decided to make this version. Tasted just as good. Took a couple of mins longer to cook and slightly softer in texture.
150gm Silken Tofu – Organic and Non GMO (please make sure you buy non GMO)
1 tbsp Chia seeds
1 tsp each: Desiccated coconut, ground flax and cinnamon
1 scp Vanilla Pea Protein
1/4 c. Quinoa flakes (Personally I like to get all the dust off so I put in a sieve and give it a gentle shake)
1/4c. Water (add a little at a time – this will depend on the protein powder you are using as to how much you need. You need to end with a consistency like thick yoghurt)
Toasted nuts and coconut and few berries to pop on top. I also used a little tofu with cashew butter instead of yoghurt! and of course some more cinnamon 🙂
Heat an omelette pan with a little coconut oil.
Place everything in a blender and whiz until combined. Then pour/spoon mixture into the heated pan. Cover for about 3mins or until set, then flip and cook for a further minute or so.
Turn onto plate, add topping of your choice and enjoy.
Note: hopefully between this post and yesterday, you can find an option that works for you. i.e. use Quinoa instead of Oats or vice versa.
