I just love the vibrancy of this salad.  I’ve been providing a complete support back up for a client this week whilst she’s been working extremely long hours at the Horse of the Year Show and this is just one of the many dishes I supplied her with….

Fresh, tasty and light and goes so well with grilled fish, chicken, thai style meatballs (Pg. 69 in Go Clean & Lean with Carie book) and this salad can be found on Pg. 84.

Very fast to make and tastes devine the next day too!

2 lg. zucchini – cut into long thin strips or grated
1 lg. carrot – cut or grated as above
4 spring onion – finely sliced on cut on angles
1/2 – 1 c. fresh coriander – coarsely chopped
fresh red chili (optional)
2 tbsp. sesame seeds – toasted (optional)

2 tbsp. light soy sauce or fish Sauce
1 tbsp. sesame oil
2 cm fresh ginger – peeled & grated or finely chopped

In a large bowl mix all the prepared raw vegetables.
Mix all the dressing ingredients together in a bowl or shake in a container and add to salad.
Combine everything together and chill for at least 30 mins to 1 hr. prior to serving.
