Sometimes you just need to jazz it up! Try this fresh and zesty version of my Red Cabbage Slaw. For speed I prepared the veggies in the food processor.
1/4 large red cabbage – shredded
1 large carrot – grated
1/2 small red onion – grated or finely chopped
3 good sized florets of cauliflower – grated
handful of mixed fresh parsley & mint – chopped
2 fresh limes, zest and juice (just use 1 if they are really juicy)
1 tablespoon White wine vinegar
2 tablespoon extra virgin olive oil
Chilli flakes – to taste (optional)
Freshly cracked salt & pepper to taste
In a large bowl place all the raw veggies, then mix the dressing ingredients and pour over salad, mix well and chill prior to serving.
