Curly Kale Stir Fry

KALE Superfood stir fry

Today I really fancied a good plate full of energising veggies after my late morning workout.  Nothing too heavy.  Here’s what was in my Stir Fry.
Be prepared to be powered up!

1 med Onion
1 med Carrot
1 med Courgette/Zucchini
1/4 sm Leek
3 garlic cloves
3 sm chilli’s (2 red/1 green) – optional but I love the fire!
Full bunch Curly Kale – leaves stripped from stalks

1/4 c dried Karengo fronds (optional for added Iodine and nutrients) (see previous post)
1 tbsp Sunflower seeds

Drizzle good quality Olive Oil

Wash and prepare veggies. Add a couple of tablespoon of water to base of pan, heat and add all ingredients except the kale, karengo and sunflower seeds.
When the other veggies are slightly tender, add the Kale and Karengo and saute for another minute or so until just tender.
Drizzle with Olive Oil and work through veggies. (I add this last to ensure I keep the full nutrient qualities of the oil).
Serve and sprinkle with seeds.
Can be served on it’s own, or use as a side dish to accommpany meat, fish, tofu etc.

And….if you’re struggling with a cold, this dish packs an almightly hit of Vitamin C & A, Calcium and Iron. And provides 4gm of protein per 100gm (that’s the Kale) same as Rice without the carbo load. Gotta be good 🙂
