Protein Oat n Peanut Butter Cookies

Straight from the oven!  These are tasty, filling and quick to make as all the ingredients go into the food processor.

They make a great breakfast on the go, filling snack or perfect for a pre or post workout.  Loaded with protein and a combination of quick and slow burning carbohydrates, natural sweetness from the fruit, healthy fats along with potassium, magnesium, B6, Vitamin C and best of all no added sugar!

Makes approx. 15 tablespoon size

1 1/2 cup wholegrain oats*
1 scoop vanilia protein powder (isolate)
1/3 cup natural peanut butter* (I use crunchy)
1/4 cup coconut* (desiccated)
1 ripe banana
1/3 cup applesauce unsweetened (I used frozen apples slices that I’d previously cooked and frozen flat)
1 egg*
1 tsp baking powder (gluten free)
1 tsp ground cinnamon
1/4 tsp ground nutmeg
pinch of salt

Pre-heat oven to 185oC, line a baking tray

Once all the ingredients have been placed into the blender, blitz until all combined. Using a tablespoon measure, spoon onto baking tray and flatten slightly with a fork. Ensure you leave enough space between the biscuits as they do spread during cooking.

Bake until golden brown and firm, approx. 15 mins.

Cool completely prior to storing in an airtight container.

Note* here are a few suggestions to overcome some food intolerances:

  • Replace Oats with Quinoa or Buckwheat flakes
  • Replace Peanut butter with Almond butter, or your preferred nut butter
  • Omit the egg and add a little water or use a chia egg (1 tbsp chia, soaked in 1/4c water)
  • Replace the protein powder with milk powder
  • Replace coconut with dark chocolate chips or cacao nibs
