Into a bowl:
Handful of fresh Spinach leaves
Handful of Curly kale leaves, ripped from the stalk (the stalks can be tough if not very young)
Fresh corriander leaves or parsley – to taste
2 spring onion – chopped
3-4 sundried tomato halves – chopped
1-2 tbsp. Pinenuts (toast to enhance flavour if time) or sunflower seeds
Drizzle of extra virgin olive oil and squeeze of fresh lemon, salt & fresh ground pepper to taste.
