Superfoods Salad

Keeping it simple can sometimes bring the best results! Packed full of anti-oxidant superfoods, boosting your energy levels along with providing a whacking punch of Vitamin A,K,C, B6 & 12, copper, iron, magnesium, fiber to name just a few.

This salad comes together in no time and keeps well in a sealed container in the fridge for a couple of days (that’s if it lasts that long!)

Makes heaps!

Big double handful of each: chopped raw fresh and washed
Curly kale – leaves stripped from stems (stems can be tough sometimes)
Baby silverbeat – leaves stripped from stems
Parsley – chopped
Raw beetroot – grated (small)
2 tablespoons of sunflower seeds/pumpkin seeds (toast if time available to enhance flavours)
Fresh large lemon – peel off zest and chop, juice and add to salad
Extra virgin olive oil – good slug!
pinch of Himalayan salt and good grind of black pepper

Place everything in a big bowl and mix well.
Ideas for additions if you fancy: chickpeas, cranberries, gojo berries, blueberries, chilli flakes
