Sage Chips

Yes, you heard me right!  Sage Chips.  Think Kale Chips then think Sage.  A wonderful herb that once roasted tastes nothing like sage!  hard to believe but give it a go.  
Packed full of anti-flammatory and antioxidant compounds, potentially may also assist with the good old hot sweats experienced by many during menopause, not to mention lowering blood glucose and cholestrol and alzheimer’s.

Super quick to make; all you need is the oven pre-heated to 180-190oC, baking sheets (personally I like to line with baking paper).

A good large bunch or two of fresh sage, I also use the flower heads too.
Olive oil
Fresh ground sea salt & pepper to taste

Place all the sage leaves stripped off the stalks in a large bowl or bag, place a good glug of oil into your palm and then massage the oil with both hands into the leaves and flower heads if using.
Spread out on baking sheets (try not to overlap) sprinkle with S & P and bake for 10-15mins until crispy.
Cool completely prior to storing in an air tight jar.

Keeps well for a couple of days provided they last that long!

Makes a great accommpaniment crushed and sprinkled on poached or hard boiled eggs as a suggestion or just eat as a snack.
