Kale can be substituted for any other type of greens but it does offer a nice structure and texture.
2 large handfuls of fresh kale leaves stripped from the stalk, washed and shredded. (I acyually rip the leaves with my hands to save bruising the leaves with the knife).
2 large juicy oranges – zest first (if you wish to add to the dressing) then peel and segment the orange, squeeze and extract as much juice as possible from whats left of the orange. Place this juice in a jug or container
1/4 cup toasted sunflower seeds
2-3 spring onion – finely chopped or use 1/4 red onion – finely sliced
1/4 – 1/2 cup reserved Orange juice
1/4 cup extra virgin olive oil
2 tablespoons white balsamic vinegar (use white wine vinegar if you can’t find balsamic)
1 teaspoon dijon mustard
cracked black pepper to taste.
Mix or shake well and combine with the salad ingredients
