Zero to 15mins – Fridge to Plate
Seriously this is all this yummy tasty lunch took to me to prepare, cook and plate up!
In a non stock fry pan I added:
small knob of orangic butter
garlic clove – smashed and chopped
1/2 red onion – finely chopped
1/2 large zuchinni/courgette – roughly chopped
1/2 tin of chopped tomato
fresh springs of oregano (use dried if no fresh)
salt & pepper to taste
Into the pan with lid over for about 5mins to soften veggies, then place
Place a piece of fresh Barramundi (or your favourite fish) on top.
Spoon alittle tomato mix over fish, cover with the lid again and leave for about 8-10mins (depends on size of fish)
Done! serve up and enjoy
