Sauté Broccolini, Cannellini

Broccolini and cannelini saute

A quick sautéed combo to hit the taste buds and satisfy a hunger. Well balanced nutrition.

Breakfast: great start to the day with a poached egg or too on top
Mid morning/afternoon snack: created with the perfect balance of macros to keep you going
Lunch: use as side to added protein of choice; top it off with: smoked salmon, tuna, meat, tofu, feta or goats cheese or seeds
Dinner: use a side to grilled meat, fish, tofu or light dinner by just sprinkling over some mixed seeds

Ingredients: (Makes approx. 4 serves)
1 head of broccoli or a bunch of broccolini* – rough chop
1/2 red onion – thin sliced
1 can Cannellini beans (drained and rinsed well)
1-2 cloves of garlic – crush or chop fine
1/2 tsp oregano
pinch of chilli flakes (to taste)
cracked black pepper
knob of butter or 1/2 tbsp avocado oil


Heat fry pan or wok, add butter/oil until just sizzling, add all ingredients*.
Add a lid to speed the cook time as this allows the broccolini to steam a little too, helping to soften.  Sauté until just cooked, don’t allow to go mushy!
*I tend to add the stalks in first and then after a couple of mins add the flower head.
