Cherry Protein Mousse or Ice Lollies

Are you out of ideas for a quick and delicious high protein dessert or nice healthy ice cream?

This can be made in just a few minutes with the aid of a food processor and electric whisk!  Fresh and tangy with NO extra sugars or sweeteners added.

Makes: approx. 4 cups

400gm tub Natural Goats* Yoghurt (or use your preferred choice make sure it is Natural and un-sweetened)

3/4 cup Frozen Cherries
1/2 cup Vanilla Protein Powder (NuZest Pure Pea Protein is my preferred choice)
1 heaped teaspoon Ground Cinnamon
1 Lemon – zest only

2 large Egg Whites – whisked to form soft peaks

Place all the ingredients except the egg whites in a food processor and blend until well combined and form bubbles; careful not to over blend thought and turn the mixture into curd!.

In a separate bowl; whisk the egg whites until they form soft peaks; then add the blended fruit and yoghurt mixture into the egg whites and turn over until it’s all well combined. Don’t beat the mixture at this stage, just use a turning action to combine otherwise you will lose the airy texture that the whites create.

Either serve immediately or pour the mixture into ice pop moulds or a freezer container and freeze until needed.


Notes: Goats yoghurt is naturally A2 and many who are intolerant of cows yoghurt may find that they can tolerate Goats or Sheep yoghurt.  Goats yoghurt also has a nice slightly tangy taste which balances well with the cherries.
