Look no further for an incredibly healthy Brownie.
This recipe ticks so many boxes it’s hard to believe but true; so even if you’ve given up chocolate for Lent – you are still good to go! 😉
Experience the awesome combination of Orange and Chocolate flavours but wait for it…there is NO: processed chocolate so they’re diary free, nut free, wheat and gluten free, sugar free. No; flour, eggs. No added sugars.
Great for adults and kids: brekkie on the go, lunchbox fillers for that mid morning or afternoon pick me up. Replace the chocolate bar/biscuits with these highly nutrient dense brownies. Awesome as pre-post workout too if you are making with protein powder.
Simple ingredients; I use raw Cacao nibs and powder to create that beautiful chocolate flavour without all the hidden extra’s and the fruit to add a lovely subtile sweetness without added sugars.
Makes: approx. 17 x 28cm slab – cut to desired portion size
3 c. raw sweet potato, cleaned with peel on – grated or roughly chopped (raw beetroot* can also be used 1:2 ratio to potato)
2/3 c. quinoa flakes or protein powder* (vanilia or chocolate)
½ c. goji berries (soaked in orange juice)
¼ c. raw cacao nibs
2 tbsp. chia seeds
2 lg. oranges –juiced (1 cup juice minimum), roughly chop the rest of the remaining orange – (use everything)
½ c. desiccated coconut
½ c. raw cacao powder (adjust to taste*)
1/3 – ½ c. coconut oil plus a little (tbsp.) if mix too dry
2 tsp. vanilla extract
1 rounded tsp. each: baking powder & baking soda
½ tsp. Himalayan salt
Divide the orange juice into 2 separate bowls
Soak the chia seeds with half the cacao nibs in one bowl
Soak the goji berries and remaining cacao nibs in the other
Pre-soak both for at least 30-60mins; to allow the chia to form a thick gel and the goji berries to absorb the flavour and swell. Can be soaked overnight if stored in fridge.
Pre-heat the oven 185oC
Line a baking dish with baking paper: approx. 17 x 28cm
For speed use a food processor to grate the sweet potato*.
Then switch the blades to a normal chopping one and add the roughly chopped orange ‘shell’ – use everything. Blend until a well chopped then add the goji mix and blend again until finely chopped and well mixed.
Depending on your food processor size:
Either add all the remaining ingredients and blend well until you have a rough but well mixed consistancy
Place the chopped goji and orange mix in a large bowl then add the potato and all the dry ingredients including the vanilia extract back into the processor and blend until well combined, add this to the orange and goji mix along with the soaked chia.
Turn out into prepared baking dish and spread the mixture evenly and pushing well into the corners.
Pre-score your portion sizes with a sharp knife.
Bake for approx. 25 – 30mins or until a skewer comes away clean.
Allow to cool slightly before turning onto a cooling rack.
Cool completely prior to storing in an airtight container in the refrigerator.
These Brownies also freeze very well, portion in small sealable bags and take out when needed.
Notes: * Use pure NuZest Pea Protein or Carbo/Locus Bean Protein Powder to ensure it is completely Vegan.
However if dairy isn’t a problem for you then use a quality Whey Protein.
If you have raw beetroot handy this can also be added to replace some of the sweet potato. Just be mindful that this adds additional liquid as so a little more quinoa and or protein powder will need to be added to ensure the mix does get too wet.
