Homemade Chocolate and Rum treats make a perfect finish to a dinner or gift wrap them and create a personal gift.
These treats are; wheat, gluten, dairy (double check your chocolate), no added sugars or sweeteners FREE! If need to make them nut free just replace the nuts with ground sunflower seeds that have been toasted.
Simple ingredients and easy to make; To speed thing up I use chocolate moulds to create different shapes, it’s also a lot quicker than hand rolling!
Here we go and still time to create for Christmas Day or Boxing Day
3/4 cup golden sultana’s or dried fruit of choice
1/4 cup of dark or spiced rum
Soak the fruit in the rum for several hours if possible, the longer the deeper the flavour
1 rounded cup of whole almonds – ground finely in a food processor or use 1/1.2 cups of ground almonds ready prepared
90 gm 85% dark chocolate – use the best you can afford
1 tablespoon coconut oil – melted
1-2 tablespoon chia seeds
Melt the chocolate over a warm pan, do not allow to boil
Place the soaked fruit in a blender and blitz until you have a puree.
Mix all the ingredients together; add the extra chia if the mix seems a little too wet, it’s best to add 1 tablespoon then wait about 20mins and re-access of you need the remainder.
Once all the ingredients are well combined, place into mould or roll into balls, refrigerate to allow them to set and then create gift wrapped parcel if you so desire!
